Celebrate New Year’s Eve in style at The Cove with an exquisite gala dinner featuring a carefully curated menu and wine pairings. Start the evening with a glass of Pannier Brut Selection at the drinks reception. The first course brings the luxurious flavors of Irish Langoustine with buttermilk cream, wasabi, and tarragon oil, perfectly paired with Post House Stamp of Chenin from South Africa. For a taste of Irish produce, savour the Smoked Goatsbridge Trout accompanied by ginger and lime gel and a local leaf salad, enhanced by a glass of Tenuta Frescobaldi Pomino Bianco from Italy. Indulge in the earthy richness of Grilled Garryhinch Maitake with potato foam and Korean glaze, matched with Chile’s Torreon de Parades Pinot Noir Reserva.
A highlight of the evening, Poached Ballycotton Halibut, served with local mussels, confit kelp, beurre blanc, and Royal Oscietra caviar, is elevated by the Austrian Zahel Grüner Veltliner. The feast reaches its pinnacle with Wild Irish Venison Fillet, complemented by dry-cured bacon, cranberry, and red cabbage, paired beautifully with Ricardo Perez Petalos del Bierzo Mencia from Spain.
